Winter Fruit Cookies

Ingredients:

1 ½ cups almond flour
- 1 ¼ cup rolled oats
- 1/2 cup Nuts 'N More Toffee Peanut Butter
- ⅓ cup brown sugar, packed
- 1 egg
- 1 tsp vanilla extract
- ½ tsp baking soda
- Pinch sea salt
- 1 cup dried winter fruit medley
Directions:
1. Place the peanut butter and brown sugar into a mixer and beat until well combined.
2. Add in the egg and vanilla and mix until incorporated.
3. Add in the flour, oats, baking soda and salt and mix until a dough forms. Fold in the dried fruit.
4. Use a 1 ½ inch cookie scoop to make 15 evenly sized cookie balls and then press them flat.
5. Bake the cookies for 8-10 minutes and the edges are golden brown.
