Apple Pie Ice Cream Cups

Nuts N More Apple Pie Ice Cream Cups
Ingredients
BASE
1/3c + 2.5tbs (60g) oat flour
1/2 cup (40g) oats
1/2 tsp ground cinnamon
2 tbs (42g) honey
1-2tbs water
TOPPING
Ice cream, of choice
1/2 apple, diced
1/2 tsp apple pie spice
sweetener, if desired
Directions
  1. Combine all of the ingredients for your base except the water
  2. Add the water in SLOWLY until a mold-able batter form (you don’t want it wet or sticky)
  3. Take 4 silicone muffin cups and mold batter into the inside (you could also use a muffin tin upside down. Just coat with non stick spray and mold)
  4. Place muffin cups in freezer for 20 minutes
  5. Coat a skillet with nonstick spray and put over medium heat
  6. Saute apples and sweetener
  7. Sprinkle in apple pie spice
  8. Saute until desired doneness
  9. Gently remove the muffin cups from the molded bater
  10. Place 2 tbs ice cream in each cup
  11. Top with warmed apples
