Chocolate Peanut Butter Magic Bars
Ingredients
- ½ cup chocolate peanut powder
- ½ cup oat flour
- ¼ cup almond flour
- 3 tbs + 5 tbs dry sweetener
- ¼ cup coconut butter
- 1 tbs coconut oil
- 2 large eggs
- 2 tbs peanut butter
- 1 tsp vanilla extract
- ¼ tsp salt
- ¼ cup unsweetened shredded coconut
- 1.5 tbs dark chocolate chips
- 1 tbs peanut butter chips
Method
- Preheat oven to 350 degrees
- Melt together coconut butter and coconut oil
- Place in refrigerator to chill
- Line a 9×5 in loaf pan (or desired size baking pan) with parchment paper
- Add peanut flour, oat flour, almond flour and 3tbs sweetener to a food processor
- Pulse until all lumps are gone
- Add in chilled coconut oil/butter
- Pulse until dough is formed
- Press into bottom of pan
- Bake for ~12 minutes or until set
- While base is baking, add eggs, vanilla, peanut butter, salt, remaining 5tbs sugar to a bowl.
- Beat with an electric mixer for about 3-4 minutes or until fluffy
- Beat in shredded coconut
- When base is done baking, remove and pour peanut butter mixture into pan
- Bake for an additional 15-18 minutes or until just set
- Sprinkle with chocolate and peanut butter chips, if desired
- Bake for another 5 minutes
- Allow to fully cool before slicing
Notes
*feel free to use xylitol for a sugar free option OR brown sugar OR coconut sugar
