Chocolate Peanut Butter Magic Bars

Chocolate Peanut Butter Magic Bars

  • ½ cup chocolate peanut powder
  • ½ cup oat flour
  • ¼ cup almond flour
  • 3 tbs + 5 tbs dry sweetener
  • ¼ cup coconut butter
  • 1 tbs coconut oil
  • 2 large eggs
  • 2 tbs peanut butter
  • 1 tsp vanilla extract
  • ¼ tsp salt
  • ¼ cup unsweetened shredded coconut
  • 1.5 tbs dark chocolate chips
  • 1 tbs peanut butter chips
  1. Preheat oven to 350 degrees
  2. Melt together coconut butter and coconut oil
  3. Place in refrigerator to chill
  4. Line a 9×5 in loaf pan (or desired size baking pan) with parchment paper
  5. Add peanut flour, oat flour, almond flour and 3tbs sweetener to a food processor
  6. Pulse until all lumps are gone
  7. Add in chilled coconut oil/butter
  8. Pulse until dough is formed
  9. Press into bottom of pan
  10. Bake for ~12 minutes or until set
  11. While base is baking, add eggs, vanilla, peanut butter, salt, remaining 5tbs sugar to a bowl.
  12. Beat with an electric mixer for about 3-4 minutes or until fluffy
  13. Beat in shredded coconut
  14. When base is done baking, remove and pour peanut butter mixture into pan
  15. Bake for an additional 15-18 minutes or until just set
  16. Sprinkle with chocolate and peanut butter chips, if desired
  17. Bake for another 5 minutes
  18. Allow to fully cool before slicing
*feel free to use xylitol for a sugar free option OR brown sugar OR coconut sugar
