Chocolate Peanut Butter Sandwich Cookies

Ingredients
COOKIES
1 scoop (40g) Nuts N More Chocolate Whey Protein Powder
5 tbs (36g) peanut flour
1/8 tsp baking soda
1/8 tsp salt
2 tbs xylitol (or sweetener of choice)
2 tbs Nuts N More Chocolate PB
2 (-3) tbs water
FILLING
1/4 cup Nuts N More Peanut Butter
Instructions
- Preheat oven to 400 degrees
- Lin a baking sheet with parchment paper
- Mix together whey, peanut flour, baking soda, salt and sweetener
- Cut in your chocolate peanut butter until peanut butter is in tiny balls
- Add in 2-3 tbs of water, SLOWLY until a dough is formed
- Form dough into 20 balls and flatten to form a circle shape cookie
- Bake for ~10 minutes
- Allow cookies to cool
- Spread 1 tsp of PB2 or Nuts N More PB on 1 cookie and top with a second
- Repeat until all cookies are done
- Will yield 10 ‘sandwiches’
