Maple Fig Biscotti
Ingredients
- 1 cup (112g) almond flour
- 1/4 cup Maple Peanut Powder
- ¼ cup (56g) coconut flour
- ½ tsp baking powder
- ¼ cup coconut oil, melted
- 1 large egg
- 2 tbs honey
- 1 tsp vanilla
- ½ tsp sea salt
- 3-4 large dried figs, chopped
Instructions
- Add your almond flour, maple pb powder, coconut flour, sea salt and baking powder to a food processor
- Pulse
- Add in melted coconut oil, egg, honey and vanilla
- Mix until a sticky dough forms
- Remove dough from food processor and put in a bowl
- Hand mix in chopped figs
- Cover and place in the refrigerator for 15 minutes
- Preheat over to 350 degrees F
- Line baking sheet with parchment paper
- Remove dough from refrigerator and shape into a log on parchment
- Bake for ~18 minutes
- Remove from oven and allow to cool for 1 hour
- Slice into desired shape
- Preheat oven to 300 degrees F
- Return sliced biscotti to oven for ~18 minutes
- Turn oven off and leave biscotti in oven to finish baking (about 30 minutes)
- Remove from oven and allow to cool for 2 hours
