Salted Caramel Apple Pie Pancakes

Ingredients
Pancakes
1/4 cup almond flour
1 tsp coconut flour
1 tsp apple pie spice
1/2 tsp baking powder
1 large egg
1 tbs unsweetened apple sauce
1 tsp coconut oil
1/4 tsp vanilla extract
liquid stevia, if desired
Topping
Apples, spiralized or sliced
cinnamon
xylitol
1 tsp brown butter
Method
  1. Mix together all pancake ingredients
  2. Heat skillet over medium heat
  3. Cook in desired size
  4. For top, add spiralized or sliced apples to pan with butter
  5. Sautee
  6. Add in cinnamon and xylitol
  7. Cook until just al dente
  8. Stack pancakes, drizzle with peanut butter and finish off with cinnamon apples
