White Chocolate Pumpkin Spice Peanut Butter Cups
Ingredients
- 1 cup white chocolate
- 1 tbs coconut oil
- ½ cup pumpkin spice peanut butter
- ½ cup fresh, cooked and mashed pumpkin*
- additional sweetener, optional
Method
- Lay out 20 mini cupcake liners
- Combine white chocolate and coconut oil and melt in microwave
- Take half of white chocolate and divide evenly between 20 cups
- Place in fridge to set
- Mix together pumpkin spice peanut butter, fresh pumpkin and any additional sweetener
- Drop 1 tsp pumpkin peanut butter mixture onto top of each of 20 white chocolate bottoms
- Divide the remaining white chocolate on top of the pumpkin filling
- Place the peanut butter cups in the refrigerator for 2-3 hours to set
- Enjoy!
Notes
*can sub out with canned pumpkin (not pie filling)
